I don't know about you, but I looooooove me some corn. My oldest daughter doesn't like it, and I've claimed that she's not my child because of this fact. I might be joking when I say that, but kind of not.
Maybe it's because I come from a town where they obsess over the sweet corn sold by the local University, but my affinity for this vegetable/grain, and the fact that it's pretty durn cheap has me obsessing over different ways to cook with it during its peak freshness.
In any capacity, you can't deny that buttered, grilled corn on the cob is the perfect addition to any summer get-together.

Elote en vaso is basically the "contained" version of Mexican street corn. Traditionally, it's slathered in mayo and Cotija cheese, then sprinkled with chili powder, lime juice, and cilantro.
