Five Delicious Corn Side Dishes for Your Next Summer Cookout

I don't know about you, but I looooooove me some corn. My oldest daughter doesn't like it, and I've claimed that she's not my child because of this fact. I might be joking when I say that, but kind of not.

Maybe it's because I come from a town where they obsess over the sweet corn sold by the local University, but my affinity for this vegetable/grain, and the fact that it's pretty durn cheap has me obsessing over different ways to cook with it during its peak freshness.

In any capacity, you can't deny that buttered, grilled corn on the cob is the perfect addition to any summer get-together.

Grilled Mexican Street Corn

If you haven't had Mexican street corn, you seriously need to. Last Friday I talked about our meal at Velvet Taco, where we had Elote en Vaso (corn in a cup), which was absolutely amazing.

Elote en vaso is basically the "contained" version of Mexican street corn. Traditionally, it's slathered in mayo and Cotija cheese, then sprinkled with chili powder, lime juice, and cilantro. I love that Chelsea had the thought to take Mexican street corn and stretch it a little farther. Pasta salads are pretty standard when it comes to summer get-togethers, because they fill bellies really easily for not a lot of money.

This dish takes two of my favorite foods in the whole world - corn and avocado - and puts them together in one amazingly healthy dish.

You really could have this as a super healthy main course, but it works equally as well for a side dish if you want to stretch it. Get the recipe here!

Cheesy, Buttery, Jalapeño Corn Cakes
