Happy Day After Easter, everyone! I hope you and yours had a great weekend!

I have to admit the title of this post is a little ironic, as we don't actually have any leftover Easter ham in our house at the moment. Usually this is not the case, but this year, Grandma was out of town, so we decided to have a low-key celebration with a small egg hunt in the backyard and a relaxed brunch over at Monument Cafe (note: if you're here in Austin, you absolutely must check them out, they are phenomenal). It really was the perfect day after a few long, rough weeks.

Most of these are breakfast recipes because, hey, I'm a breakfast kind of gal. But there are also some delicious-looking appetizers and lunch/dinner dishes as well.
